3. Nordic stakeholders and sustainable catering
Sammanfattning : Sustainability deficits in modern food systems are widely reported and changes in food habits towards more sustainable eating patterns, including eating seasonal and locally produced food, have been suggested to minimise the environmental impact of food consumption and production. By means of national programmes and recommendations, the Nordic countries have taken the initiative for public catering to use local, organic and seasonal food in an attempt to create a healthier and more sustainable catering sector. 5. Food for Naught : The politics of food in agricultural modernization for African smallholder food security
Sammanfattning : Why is there hunger in sub-Saharan Africa? What forces drive the global food system? What is the global food system? To approach these questions, this study investigates power and politics in food, in its production and in its organization. Proceeding from a critical realist approach, focus of this study is on the challenge of African smallholder food insecurity and how it is presented as part of a dominant discourse of agricultural modernization.
