    Sammanfattning : Phosphoglucomutase (PGM) catalyzes the reversible conversion of glucose 1-phosphate to glucose 6-phosphate. Two distinct forms of PGM have been purifed and charactierized in Lactococcus lactis growing on maltose: one specific for the alpha-isomer, and the other specific for the beta-isomer of glucose 1-phosphate.     Sammanfattning : In this thesis I have summarised my work on the analysis and improvement of xylose utilisation by recombinant S. cerevisiae. A metabolic flux model was developed and used to analyse the intracellular fluxes in the recombinant xylose utilising S. cerevisiae TMB 3001 cultivated in chemostat at various dilution rates and xylose/glucose concentrations.     Sammanfattning : This thesis deals with the central carbohydrate metabolism and exopolysaccharide (EPS) formation in two different lactic acid bacteria (LAB): Lactobacillus reuteri and Pediococcus parvulus. LAB are traditionally used as starter cultures in the food industry. In general, LAB harbours one glycolytic pathway converting carbohydrates into lactic acid. LÄS MER
