    Sammanfattning : The efficacy and function of antioxidants have been intensively studied in foods and other biological systems in recent decades. This thesis concerns different aspects of the antioxidant properties of bovine milk, with emphasis on measurement of the total antioxidant capacity (TAC), the activity of the selenium-containing glutathione peroxidase (GSHPx), and the bioavailability of selenium from bovine milk in humans.     Sammanfattning : In the environment, to which we have adapted and thrive, we are constantly exposed to reactive molecules with the potential to cause intracellular damage and cellular malfunction. One of the molecules that is transformed to very reactive free radicals is oxygen that can give rise to a variety of reactive oxygen species formed in close vicinity to sensitive structures in different compartments of the cell.     Sammanfattning : In the first part, the preparation and properties of chalcogen-containing vitamin E analogues are described. The sulfur compound 3,3,4,6,7-pentamethyl-2,3-dihydrobenzo[b]thiophene-5-ol was prepared by two different routes using ionic and radical chemistry.     Sammanfattning : This thesis describes structural and functional studies of alpha-1-microglobulin (a1m), a 26 kDa plasma and tissue protein that is evolutionarily well-conserved and belongs to the lipocalin superfamily. The lipocalins are polypeptides of 160-190-amino acids that are folded into an 8-stranded beta-barrel forming a pocket with a hydrophobic interior. LÄS MER
