1. Antioxidant Capacity in Fruit and Vegetables -Cultivar Variation - Storage Conditions - Human Antioxidant Status
Sammanfattning : The health-promoting effects of fruits and vegetables have been extensively discussed during the past decade since epidemiologic studies have shown relations between increased intake of fruit and vegetables and decreased incidences of several chronic diseases. It has been suggested that antioxidants are a main contributors to the observed effects, for example by acting as scavengers of free radicals. LÄS MER
2. Antioxidants in Bolivian Plant Foods. Antioxidant Capacity, Flavonoids and other Phenolic Compounds
Sammanfattning : The total antioxidant capacity was measured and the major phenolic and flavonoid compounds were identified and quantified in a selection of Bolivian crops growing at different altitudes above seal level (a.s.l.). LÄS MER
3. Selenium Compounds and Antioxidant Capacity in Bovine Milk. Studies on Glutathione Peroxidase, Bioavailability and Electrochemical Techniques
Sammanfattning : The efficacy and function of antioxidants have been intensively studied in foods and other biological systems in recent decades. This thesis concerns different aspects of the antioxidant properties of bovine milk, with emphasis on measurement of the total antioxidant capacity (TAC), the activity of the selenium-containing glutathione peroxidase (GSHPx), and the bioavailability of selenium from bovine milk in humans. 4. Antioxidants in Andean food and meals
Sammanfattning : Abstract The constant need to improve health and to prevent disease in Bolivia, especially in the Andean region with its extreme environmental conditions (high altitude and lower temperatures), motivated us to extend studies of antioxidant sources in foods and plants, since antioxidants are believed to have major health benefits. Spectrophotometric methods, such as ABTS (2, 2’- azinobis-3-ethylbenzotiazoline-6-sulfonic acid) and FRAP (ferric reduction antioxidant power), were used to evaluate antioxidant activity. LÄS MER
5. Antioxidants from diet and supplements in relation to cardiovascular disease
Sammanfattning : Many epidemiological studies have reported an inverse association between fruit and vegetable consumption and cardiovascular diseases (CVD). Because fruits and vegetables are high in antioxidants they were hypothesized to be one the factors responsible for the protective mechanisms. LÄS MER
