  1. 21. Bio-inspired polysaccharide nanocomposites and foams

    Författare :Anna Svagan; Lars Berglund; Mats Stading; KTH; []
    Nyckelord :MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; cellulose; starch; microfibrillated cellulose; biomimetic; nanocomposite; nanocomposite foam; mechanical properties; Biomaterials; Biomaterial;

    Sammanfattning : Today, the majority of materials used for single-use packaging are petroleum-based synthetic polymers. With increased concern about the environmental protection, efforts have been made to develop alternative biodegradable materials from renewable resources. Starch offers an attractive alternative since it is of low cost and abundant. LÄS MER

  2. 22. Multi-scale characterisation of pasta - Effects of raw materials on water absorption, water distribution, and microstructure

    Författare :Thomas Steglich; Chalmers tekniska högskola; []
    Nyckelord :LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; magnetic resonance imaging; dietary fibre; texture properties; light microscopy; starch; water distribution; gluten; bran; pasta; microstructure;

    Sammanfattning : Pasta is a product with a long history, but is also still being developed today. Producers want to use new raw materials to make pasta more nutritious, less allergenic, and less dependent on durum wheat. All have in common that new raw materials shall not compromise the desired texture properties of cooked pasta such as the “al dente” feeling. LÄS MER

  3. 23. Carbohydrate-Rich Foods in the Treatment of the Insulin Resistance Syndrome : Studies of the Importance of the Glycaemic Index and Dietary Fibre

    Författare :Anette Järvi; Gabriele Riccardi; Uppsala universitet; []
    Nyckelord :Medical sciences; diabetes; insulin resistance; carbohydrates; starch; glycaemic index; dietary fibre; postprandial; second-meal; glucose; insulin; triacylglycerol; MEDICIN OCH VÅRD; MEDICINE; MEDICIN; Geriatrics; geriatrik;

    Sammanfattning : The glycaemic responses to various carbohydrate-rich foods are partly dependent on the rate at which the carbohydrate is digested and absorbed. The glycaemic index (GI) is a way of ranking foods according to their glycaemic response and is recommended as a useful tool in identifying starch-rich foods that give the most favourable glycaemic response. 4. 24. Nuclear magnetic resonance studies of water self-diffusion in porous systems

    Författare :Daniel Topgaard; Fysikalisk kemi; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; diffusion diffraction; nonfreezing; anisotropy; tortuosity; cross relaxation; emulsion; starch; cellulose; porous material; water; NMR; self-diffusion; Physical chemistry; Fysikalisk kemi;

    Sammanfattning : Proton nuclear magnetic resonance (NMR) was used to study the self-diffusion of water in porous systems that respond to a change in water content in order to elucidate the porous structure and the properties of the confined water. In the carbohydrate systems cellulose fibers and starch granules, water is free to move throughout the porous objects, albeit with a rate reduced from the value of the bulk liquid, The reduction is related to the tortuosity of the pore space filled by water. 5. 25. Development of a Process for Reducing the Content of b-N-Oxalyl a,b-Diamino Propionic Acid (b-ODAP) in Grass Pea (Lathyrus sativus) Seeds: Nutritional Consequences and Technological Aspects

    Författare :Girma Akalu; Avdelningen för livsmedel och läkemedel; []
    Nyckelord :MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; process optimization; functional properties; biological value; net protein utilization; starch digestibility; protein digestibility; Grass pea Lathyrus sativus ; b-ODAP; Food and drink technology; Livsmedelsteknik;

    Sammanfattning : Grass pea (Lathyrus sativus) is a leguminous food crop, grown mainly in the tropical and subtropical regions. It has valuable nutrients, however consumption of the seeds is reported to cause lathyrism, due to the presence of a non-protein amino acid (?-ODAP). LÄS MER
