31. Mechanistic Studies of Dinuclear Metalloenzymes - A Model Approach
Sammanfattning : With the goal to study the mechanisms of dinuclear metalloenzymes, a new line of synthetic and computational models were prepared and studied. Mixed imidazole and carboxylate multidentate complexes were synthesized to better simulate carboxylate-rich ligand environments. LÄS MER
32. Selenium Compounds and Antioxidant Capacity in Bovine Milk. Studies on Glutathione Peroxidase, Bioavailability and Electrochemical Techniques
Sammanfattning : The efficacy and function of antioxidants have been intensively studied in foods and other biological systems in recent decades. This thesis concerns different aspects of the antioxidant properties of bovine milk, with emphasis on measurement of the total antioxidant capacity (TAC), the activity of the selenium-containing glutathione peroxidase (GSHPx), and the bioavailability of selenium from bovine milk in humans. 33. Sample Preparation of Organic Compounds in Environmental Analysis using Liquid Membrane Extraction
Sammanfattning : This thesis demonstrates the potential of the liquid membrane extraction technique as an alternative method for the analysis of trace ionisable organic compounds in the environment. Liquid membrane based extraction methods for the analysis of s-triazine herbicides and phenolic compounds were developed. LÄS MER
34. Glutathione peroxidase and selenium in meat - Tissue and species variation, thermal stability and selenium speciation
Sammanfattning : Lipid oxidation is a major problem in muscle foods, leading to a loss in quality and nutritional value. It occurs in raw meat but is usually more pronounced in cooked meat. Since the demands of consumers for ready-to-eat foods have increased, the control of off-flavour in cooked meat is an important industrial problem. LÄS MER
35. Complexation between hydrophobically modified polymers and amylose. Gelation and competition by surfactants
Sammanfattning : Aqueous mixtures of hydrophobically modified polymers (HMP) with amylose have been investigated by rheology and 1H NMR. Amylose can cross-link HMP chains by forming single-helical inclusion complexes with the hydrophobic side chains of the HMP, leading to thermoreversible, elastic, and thixotropic gels at ambient temperatures.
