11. Aroma Partition and Release from Soft Drinks, Jam, and Jellied Sweets
Sammanfattning : The research described in the present thesis was focused on the influence of food ingredients and structures on the partition and release of aroma compounds from model systems such as soft drinks, jam, and jellied sweets. The effects on aroma release were studied during both static and dynamic conditions, the latter by both model mouth and in-nose measurements. LÄS MER
12. Protein-Surfactant Interactions Phase Behaviour and Phase Structure
Sammanfattning : Protein-surfactant interactions in water are investigated by following the phase equilibria for protein-surfactant pairs whose constituents carry both opposite and the same sign of charge. The concentration ranges studied are: 0-20 wt% protein, 0-20 wt% surfactant, and 80-100 wt% water. LÄS MER
13. Interaction between Crosslinked Polyelectrolyte Gels and Oppositely Charged Surfactants
Sammanfattning : The interactions between anionic, crosslinked gels and cationic surfactants have been investigated. When exposed to oppositely charged surfactant, the gel collapses into a dense complex of polyion and micelles. LÄS MER
14. Diffusion studies in gels using holographic laser interferometry
Sammanfattning : This thesis is an investigation of the potential of holographic laser interferometry for the study of diffusion of both small solutes and macromolecules. An investigation on the importance of errors due to light deflection in refarctive index gradients showed that the magnitude of the refractive index gradients were negligible for the system investigated. 15. Dynamics of Disordered Materials in Confined Geometries
Sammanfattning : This thesis is concerned with effects of geometrical confinement on dynamics in disordered materials in the nanoscopic range. Of particular interest is the dynamics around the liquid to glass transition. Two systems have been investigated: thin polymer films and polymer gels. LÄS MER
