    Sammanfattning : The research described in the present thesis was focused on the influence of food ingredients and structures on the partition and release of aroma compounds from model systems such as soft drinks, jam, and jellied sweets.     Sammanfattning : This thesis is an investigation of the potential of holographic laser interferometry for the study of diffusion of both small solutes and macromolecules. An investigation on the importance of errors due to light deflection in refarctive index gradients showed that the magnitude of the refractive index gradients were negligible for the system investigated.     Sammanfattning : Increasingly stringent controls on metal concentrations in sewage sludge destined for agricultural application provided a basis for the study of the relevance of metal speciation in sewage sludge.
