11. Nuclear magnetic resonance studies of water self-diffusion in porous systems
Sammanfattning : Proton nuclear magnetic resonance (NMR) was used to study the self-diffusion of water in porous systems that respond to a change in water content in order to elucidate the porous structure and the properties of the confined water. In the carbohydrate systems cellulose fibers and starch granules, water is free to move throughout the porous objects, albeit with a rate reduced from the value of the bulk liquid, The reduction is related to the tortuosity of the pore space filled by water. 12. Shaping of Food Microstructures
Sammanfattning : Shape, the shaping process and the functionality of shape for food microstructure are the focus of this thesis. Shape is one of the parameters that influences the microstructure functionality; hence microstructure shape optimisation is an interesting task in the development of new functional materials and processes, especially for food, in which structure-related texture is an essential part of the product. 13. Drop Break-up in High-Pressure Homogenisers
Sammanfattning : The overall aim of this project was to investigate the drop break-up process in milk homogenisers. This was done by measurements and calculations of the flow fields in the gap region and by visualisation of drops being broken up. To make visualisation and measurements possible, two scale models of a homogeniser gap were developed. LÄS MER
14. Excavation damage from blasting with emulsion explosives : Quality control and macro fracturing in the remaining rock
Sammanfattning : Excavation damage is usually regulated in Swedish infrastructure tunnel contracts as it can influence the quality and lifecycle cost for tunneling projects. The topic is important for underground constructions with a long operation period such as tunnels for public transport, permanent access tunnels in mines or underground repositories for nuclear waste. 15. Cellulose Dissolution and Amphiphilicity : Insights on the Emulsion Formation and Stabilization
Sammanfattning : An amphiphilic polymer is expected to adsorb at the oil-water interface and be capable of stabilizing emulsions. Cellulose derivatives, cellulose nanoparticles and regenerated cellulose particles show an intrinsic amphiphilic character by self-assembling at oil-water interfaces and stabilizing emulsions without the aid of surfactants or any other co-stabilizers.
