  1. 1. Bioprocessing of Oats Influence on Phytate Hydrolysis and Mineral Bioavailability

    Författare :Marie Larsson; Chalmers tekniska högskola; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; NATURVETENSKAP; NATURAL SCIENCES; zinc absorption; bread fermentation; oats; bioprocessing; malting; iron absorption; mineral bioavailability; phytase activity; phytate;

    Sammanfattning : The effects of bioprocessing on enzymatic phytate hydrolysis in oats were studied during malting, soaking and breadmaking to elucidate the reasons for poor phytase activity in oats and determine the optimal conditions for phytate hydrolysis. Malting of oats in a pilot plant was studied to investigate whether the malting process developed in the laboratory could be used in large scale preparation of oats with reduced phytate content. 2. 2. Fermentation of quinoa, canihua and amaranth to degrade phytate and improve mineral bioavailability

    Författare :Vanesa Castro-Alba; Avdelningen för livsmedel och läkemedel; []
    Nyckelord :LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Quinoa; Canihua; Amaranth; Iron; Zinc; Calcium; Phytate; Fermentation; Accessibility; Bioavailability;

    Sammanfattning : Plant-based diets are the main source of nutrients for vegetarians worldwide and for low-income inhabitants of developing countries, such as in rural areas of Bolivia. These diets may contain high levels of mineral inhibitors such as phytate that impairs mineral absorption in the human gut. LÄS MER

  3. 3. Nutritional Assessment in a Rural Area of Bolivia. A Study of Zinc and Iron Deficiencies and Bioavailability

    Författare :Claudia Lazarte; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; zinc; iron; deficiencies; bioavailability; fermentation; developing countries; plant-based diets;

    Sammanfattning : While originally, protein-energy deficiency was considered the main factor of malnutrition, it is now understood that micronutrient deficiencies play a fundamental role in a variety of health and disease outcomes. Zinc and iron deficiencies are still highly prevalent in low-income countries, whereas insufficient intakes and diets with low mineral absorption are the major causes. LÄS MER

  4. 4. Cereal- and Microbial Phytases. Phytate Degradation, Mineral Binding and Absorption

    Författare :Maria Türk; Chalmers tekniska högskola; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; mineral binding; iron absorption; cereals; phytate degradation; phytase; dietary phytases; S cerevisiae; A niger;

    Sammanfattning : Cereal foods contain large amounts of phytate (myo-inositol hexaphosphate; IP6), which is the major storage form of phosphorus, in the plant. IP6 possesses a high potential for chelating minerals, such as Fe 2+, Zn2+, Mg2+ and Ca2+. LÄS MER

  5. 5. Analysis and speciation of organic phosphorus in environmental matrices : Development of methods to improve 31P NMR analysis

    Författare :Johan Vestergren; Gröbner Gerhard; Jurgen Schleucher; Ulrik Ilstedt; Per Persson; Reiner Giesler; Benjamin L. Turner; Umeå universitet; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; Phosphorus; soil; 31P NMR; NaOH EDTA; terrestrial; sulfide; speciation; bioavailability; paramagnetic; humus; boreal; tropical; multi-dimensional; agroforestry; chronosequence; fysikalisk kemi; Physical Chemistry;

    Sammanfattning : Phosphorus (P) is an essential element for life on our planet. It is central in numerous biochemical processes in terrestrial and aqueous ecosystems including food production; and it is the primary growth-limiting nutrient in some of the world’s biomes. LÄS MER
