1. Milk Folates: Characterisation and Availability
Sammanfattning : With the ultimate goal to study milk folate bioavailability, a reverse-phase HPLC technique was developed and compared with a radioprotein binding assay. All methods showed similar ranges for folates in cow’s milk, with the variation attributed to seasonal variations and the use of different starter cultures. LÄS MER
2. Diet and common neurological disorders: cohort studies on dementia, Parkinson’s disease, and stroke
Sammanfattning : Risk factors for dementia, Parkinson’s disease, and stroke have been widely studied but there are still research gaps concerning the role of diet for the development of these diseases. The overall aim of this thesis was to investigate whether various aspects of diet are associated with common disorders and diseases in the brain. LÄS MER

4. On yeasts from traditional fermented foods - Characterization, phytate degradation, strain improvement and applications
Sammanfattning : Plant materials naturally contain minerals of iron, zinc and calcium. However, plants also contain a compound called phytic acid, which can chelate the minerals and form insoluble complexes. Minerals from plant foods are unavailable for intestinal uptake when they are bound in phytate complexes. LÄS MER
5. Selenium Compounds and Antioxidant Capacity in Bovine Milk. Studies on Glutathione Peroxidase, Bioavailability and Electrochemical Techniques
Sammanfattning : The efficacy and function of antioxidants have been intensively studied in foods and other biological systems in recent decades. This thesis concerns different aspects of the antioxidant properties of bovine milk, with emphasis on measurement of the total antioxidant capacity (TAC), the activity of the selenium-containing glutathione peroxidase (GSHPx), and the bioavailability of selenium from bovine milk in humans.
