    Författare :Carola Rojas; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; amylopectin; hydrodynamic radius; field flow fractionation; overlap concentration; minerals; enzymes; cassava; hydrolyses; glucose; maltose; sucros; amylase; hydrolyses kinetics; starch granule structure; radius of gyration; drying kinetics; heat transfer; high pressure homogenisation; mass transfer;

    Sammanfattning : The objective of the present thesis was to understand how the quality and performance of dried cassava products could be developed by drying and other processing steps. This goal was achieved in several stages. LÄS MER

  2. 2. Dynamic Modelling and Simulation of Liquid Food Process Lines

    Författare :Tomas Skoglund; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Process lines; Dynamic model; Microbial deactivation; Data- och systemvetenskap; computer technology; Systems engineering; Fuzzy traceability; Traceability; Thermal engineering; termodynamik; Termisk teknik; applied thermodynamics; Chemical technology and engineering; Kemiteknik och kemisk teknologi; Food and drink technology; Heat exchanger; Dispersion; Fluid property transition; Liquid food; Dynamic simulation; Livsmedelsteknik;

    Sammanfattning : In the present work a dynamic model library of components for process lines was developed. The analysis addressed characteristic aspects of liquid food process lines, and new models were developed for fluid transitions, dispersion, mixing zones and first-order chemical reactions in pipes and heat exchangers. 3. 3. Some Fluid Dynamic Characteristics in the Scale-up of Rushton Turbine-Agitated Tanks

    Författare :Eva Ståhl Wernersson; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Chemical technology and engineering; Livsmedelsteknik; Food and drink technology; Rushton turbine; turbulent kinetic energy; geometry; local energy dissipation rate; power input; scale-up; anemometry measurements; agitated tanks; turbulence; Kemiteknik och kemisk teknologi;

    Sammanfattning : Turbine-agitated tanks are used in chemical and biochemical applications to increase mixing which, in turn, affects the yield, productivity and product quality. The purpose of this work was to study the hydrodynamic influence on the scale-up of turbine-agitated tanks, commonly used in fermentation. LÄS MER

  4. 4. From Starch to Starch Microspheres. Formation of an Ordered Structure during Processing

    Författare :Lidia Elfstrand; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Teknik; Pharmaceutical and related technologies; Läkemedelsteknik och relaterad teknik; crystallization; Technological sciences; starch microspheres; protein delivery;

    Sammanfattning : Starch microsphere is a dosage form suitable for the encapsulation of protein drugs. The starch microspheres investigated in this thesis are intended for release of the drug in a pre-designed way, or in controlled manner. LÄS MER

  5. 5. Fouling and cleaning of solid surfaces. The influence of surface characteristics and operating conditions

    Författare :Camilla Karlsson; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Food and drink technology; ellipsometry; sodium hydroxide; anionic surfactant; betalactoglobulin; protein; stainless steel; hydrophilic surface; hydrophobic surface; cleaning; adsorption; fouling; Livsmedelsteknik; Chemical technology and engineering; Kemiteknik och kemisk teknologi;

    Sammanfattning : The severe fouling common in food processing puts high demands on equipment cleaning. Adsorption of the protein betalactoglobulin to solid surfaces and its subsequent removal were followed using in situ ellipsometry. Most experiments were done in a stirred cuvette. Additionally, a flow cell was designed, which was employed in some work. LÄS MER
