  1. 1. Inhibition of Calcium and Zinc Absorption by Phytate in Man Methodological Studies and Hydrothermal Processing of Cereals to Improve Absorption

    Författare :Kerstin Fredlund; Chalmers tekniska högskola; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; barley; wheat; rye; 65Zn; oats; zinc absorption; whole grains; InsP6; hydrothermal processing; calcium absorption; rice; radionuclide technique; 47Ca; extrinsic labelling; phytate; hydrothermal treatment; myo-inositol; calcium retention; whole-body counting;

    Sammanfattning : A mathematical model based on measurements in a whole-body counter described the retention of calcium in the human body. It was shown that the relative retention of intravenous and orally administered 47Ca in all subjects (n = 10 - 11) were well described by fitting a simple function of time with two free parameters to a few whole-body measurements after day 6, when the unabsorbed calcium had been excreted. 2. 2. Hydrothermal Processing of Cereals Optimal Conditions for Phytete Degradation and Myo-Inositol Formation. Effect on Phytase Activity and Mineral Absorption

    Författare :Eva-Lotta Bergman; Chalmers tekniska högskola; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; rye; rice; barley; wheat; myo-inositol; calcium absorption; phytase; hydrothermal processing; zinc absorption; phytate;

    Sammanfattning : The aim of this thesis was to optimise a hydrothermal process to degrade phytate (myo-inositol hexaphosphate), increase the level of free myo-inositol and preserve phytase activity in cereals with the purpose to achieve products with improved mineral bioavailability. Phytate is known to impair mineral absorption and myo-inositol is considered to be a semi-essential nutrient. LÄS MER

  3. 3. Zinc in cerebrospinal fluid and serum in some neurological diseases

    Författare :Ragnar Palm; Umeå universitet; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; zinc; copper; serum; cerebrospinal fluid; albumin; multiple sclerosis; epilepsy; phenytoin; blood brain barrier damage; subarachnoid haemorrhage.;

    Sammanfattning : The trace elements zinc and copper are essential components of many enzymes, some of which are of importance for the development and function of the central nervous system. Deficiency of the metals has been shown to lead to malformations and to the loss of myelin in animals. LÄS MER

  4. 4. Micro-galvanic effects and corrosion inhibition of copper-zinc alloys

    Författare :Mattias Forslund; Jinshan Pan; Christofer Leygraf; Per Claesson; Jin Ying; KTH; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; Copper; zinc; brass; octadecanethiol; IR Spectroscopy; AFM; atmospheric corrosion; aqueous corrosion; corrosion inhibition; Koppar; zink; mässing; oktadekantiol; IR-reflektions absorptionsspektroskopi; AFM; atmosfärisk korrosion; vattenaktig korrosion; korrosionsinhibering.; Chemical Engineering; Kemiteknik; Kemi; Chemistry;

    Sammanfattning :    With the advancement and accessibility of local probing techniques that can operate at the submicron scale it has become possible to analyse the local corrosion properties of industrially important metallic materials and relate these properties to microstructure characteristics of the same materials. In this doctoral study the focus has been on copper-zinc samples, both as industrial brass alloys and as micro-patterned copper-zinc samples. LÄS MER

  5. 5. Bioprocessing of Oats Influence on Phytate Hydrolysis and Mineral Bioavailability

    Författare :Marie Larsson; Chalmers tekniska högskola; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; NATURVETENSKAP; NATURAL SCIENCES; zinc absorption; bread fermentation; oats; bioprocessing; malting; iron absorption; mineral bioavailability; phytase activity; phytate;

    Sammanfattning : The effects of bioprocessing on enzymatic phytate hydrolysis in oats were studied during malting, soaking and breadmaking to elucidate the reasons for poor phytase activity in oats and determine the optimal conditions for phytate hydrolysis. Malting of oats in a pilot plant was studied to investigate whether the malting process developed in the laboratory could be used in large scale preparation of oats with reduced phytate content.
