  1. 11. Functional characterization of cytosolic and mitochondrial thioredoxin reductases

    Författare :Ivan Nalvarte; Karolinska Institutet; Karolinska Institutet; []
    Nyckelord :Thioredoxin; thioredoxin reductase; reactive oxygen species; mitochondria; differentiation; redox signaling; ubiquinone; cytochrome c; selenium; selenoprotein.;

    Sammanfattning : Mammalian thioredoxin reductases (TrxRs) are homodimeric selenoproteins belonging to the nucleotide oxidoreductase family. They contain a C-terminal penultimate selenocysteine residue, which is kept reduced by the N-terminal redox active site, CVNVGC, of the adjacent subunit. LÄS MER

  2. 12. Glutathione peroxidase and selenium in meat - Tissue and species variation, thermal stability and selenium speciation

    Författare :Charlotte Daun; Kemiska institutionen; []
    Nyckelord :NATURVETENSKAP; NATURAL SCIENCES; Nutrition; Näringslära; speciation of selenium; lipid oxidation; thermal stability; RN phenotype; ageing; meat; Glutathione peroxidase; selenium;

    Sammanfattning : Lipid oxidation is a major problem in muscle foods, leading to a loss in quality and nutritional value. It occurs in raw meat but is usually more pronounced in cooked meat. Since the demands of consumers for ready-to-eat foods have increased, the control of off-flavour in cooked meat is an important industrial problem. LÄS MER

  3. 13. Targeting glutathione peroxidases : identifying environmental modulators, and screening for novel small molecule inhibitors

    Författare :Dorian M. Cheff; Karolinska Institutet; Karolinska Institutet; []
    Nyckelord :;

    Sammanfattning : Glutathione peroxidases (GPXs) are a family of selenoproteins that are critical regulators of reactive oxygen species (ROS) in the cell, specifically hydroperoxides like hydrogen peroxide (H2O2). ROS are important for normal cell signaling and are tightly controlled to promote cell growth, proliferation, and survival. LÄS MER
