    Sammanfattning : Human food consumption contributes to climate change and changing consumption patterns towards a more vegetable-based diet could decrease GHG emissions. However, such change is difficult to achieve due to ingrained habits, cultural and social norms and culinary preferences, highlighting a need to understand consumer behaviour and find efficient strategies for communicating the issue within supermarkets.     Sammanfattning : The health-promoting effects of fruits and vegetables have been extensively discussed during the past decade since epidemiologic studies have shown relations between increased intake of fruit and vegetables and decreased incidences of several chronic diseases.     Sammanfattning : Observational studies have indicated that fruit and vegetables, and dietary antioxidants may play an important role in reducing the risk of chronic diseases, potentially by affecting pathogenic mechanisms such as oxidative stress and inflammation. Clinical trials investigating the effects of supplementation with single or a few antioxidants in high doses have, however, shown inconsistent results and thus have not been able to support the observational findings. Contamination of these products with bacterial pathogens can occur during any step in the production chain and, since there is no step that kills pathogens during the production of RTE salads, a completely safe final product can never be guaranteed.
