6. Interactions between dietary chicory, gut microbiota and immune responses
Sammanfattning : This thesis provides a better understanding of interactions between diet, gut microbiota, and immune responses to a specific dietary fiber source, chicory (Cichorium intybus L). This was achieved by examining the impact of chicory fiber on animal performance, digestibility, gut development, commensal bacteria community structure in small and large intestine, and follow-up reactions with specific immune components, cytoprotective heat shock protein (HSP) 27 and 72, in vivo and in vitro. 8. Colostrum quality, intestinal microbiota and implications for health in young dairy calves
Sammanfattning : The early life of calves in southern Vietnam and in Sweden were studied in this thesis, with the focus on colostrum quality, gut microbial communities and antimicrobialresistant Escherichia coli. The first of four studies showed that most cows on smallholder farms in Vietnam produced colostrum of good quality and that only around 10% of calves suffered from failure of passive immune transfer. 10. Fermented probiotic beverage based on quinoa : Functionality, hygiene, and health effects
Sammanfattning : White quinoa grains were used as a source of novel beneficial microorganisms and as a matrix for development of a fermented plant-based drink. Studies on the quinoa grain microbiota were performed by applying spontaneous fermentation to allow isolation of autochthonous Lactiplantibacillus strains with potential to be used as starter cultures.
