6. The Role of Sugars for Protein Stabilization
Sammanfattning : The understanding of biomolecular interactions with water and co-solutes can lead to greater knowledge regarding the mechanisms behind biomolecular stabilization. This is highly important for developing technologies aimed to preserve biological materials. LÄS MER
7. Acrylamide in Potato Crisps - A Three-year Study on Swedish-grown Potatoes
Sammanfattning : Acrylamide, a probable human carcinogen, has been found at mg/kg levels, in heat-treated carbohydrate-rich foods. Acrylamide is formed via the Maillard reaction as a result of the reaction between the amino acid asparagine and reducing sugars (glucose and fructose). LÄS MER
8. UDP-sugar metabolizing pyrophosphorylases in plants : formation of precursors for essential glycosylation-reactions
Sammanfattning : UDP-sugar metabolizing pyrophosphorylases provide the primary mechanism for de novo synthesis of UDP-sugars, which can then be used for myriads of glycosyltranferase reactions, producing cell wall carbohydrates, sucrose, glycoproteins and glycolipids, as well as many other glycosylated compounds. The pyrophosphorylases can be divided into three families: UDP-Glc pyrophosphorylase (UGPase), UDP-sugar pyrophosphorylase (USPase) and UDP-N-acety lglucosamine pyrophosphorylase (UAGPase), which can be discriminated both by differences in accepted substrate range and amino acid sequences. 9. Enhancing the stability of probiotics: Freeze-drying and encapsulation
Sammanfattning : This research dives into the intricate world of freeze-drying, an essential process in pharmaceutical and probiotic industries, to better understand the factors affecting probiotic stability during storage. The process of freeze-drying and the composition of freeze-dried products significantly affect the stability of probiotics, yet factors such as the material’s encapsulation properties remain relatively unexplored, demanding further research. 10. Structural studies of some microbial polysaccharides containing aminodeoxy sugars and aminodeoxy hexuronic acids
Sammanfattning : The structures of extracellular poly saccharides from RhinocladieIla, capsular polysaccharides from Haemophilus influenzae type d and e3 and the 0-antigen from Vibrio cholerae have been determined. The principal methods used were 1H and 13C nuclear magnetic resonance spectroscopy and methylation analysis. LÄS MER
