    Sammanfattning : Over the past century, the pharmaceutical industry has been a major contributor of individual and population health and societal wealth. Its products and services have contributed to longevity of large groups of patients and symptom relief from major diseases. LÄS MER

  4. 4. Fat bloom on chocolate confectionery systems - From core to surface

    Författare :Hanna Dahlenborg; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; surface structure; particles; migration; fat bloom; cocoa butter; chocolate;

    Sammanfattning : Abstract Fat bloom on chocolate is a major problem for the confectionery industry since the unappetising appearance and negative sensory effects lead to rejection by customers. The presence of fat bloom on chocolate confectionery systems is usually connected to migration of liquid fat due to the difference in composition between filling triacylglycerols (TAGs) and cocoa butter TAGs. 5. 5. Mass transport mechanisms and module design aspects in the recovery of dilute volatile organic compounds by hydrophobic pervaporation

    Författare :Olivera Trifunovic; Livsmedelsteknik; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Livsmedelsteknik; Food and drink technology; Teknik; Technological sciences; Aroma recovery; Module design; Hydrophobic pervaporation; Mass transport;

    Sammanfattning : Hydrophobic pervaporation has gained a lot of attention as an alternative process for mild aroma recovery, but the real commercial applications of this process are still in their infancies. Better understanding of mass transport phenomena in composite pervaporation membranes is essential from the point of view of membrane manufacturing, while process simulation is an important tool for predicting pervaporation module performance.
