    Sammanfattning : Many biopolymer mixtures exhibit segregative phase separation that generates regions enriched in one polymer and depleted in the other.     Sammanfattning : This thesis focuses on the kinetics of phase separation and gelation in aqueous mixtures of gelatin and maltodextrin. The structure evolution of these mixtures at different length scales was recorded by confocal laser scanning microscopy (CLSM) and transmission electron microscopy (TEM).
