1. Nutritional and physicochemical characterisation of dietary fibre in wheat fractions
Sammanfattning : Dietary fibre is fermented in the colon to short-chain fatty acids (SCFAs), of which especially butyric and propionic acid may have health-promoting effects. One source of dietary fibre may be by-products from wheat, which are currently used as animal feed. LÄS MER
2. Carbohydrate Levels and Fructan Metabolism in Barley (Hordeum vulgare L.) Leaves : effects of manipulating mineral nutrition and photosynthesis
Sammanfattning : Carbohydrate levels and fructan metabolism were studied in the leaves of barley (Hordeum vulgare L. cv. Agneta) plants subjected to phosphorous (P)-deficiency, nitrogen (N)-deficiency and N-resupply following the N-deficiency. LÄS MER
3. Characterisation of dietary fibre in cereal grains and products : emphasis on triticale and rye
Sammanfattning : Utility of cereals is mainly defined by their composition. High content of extractable dietary fibre (DF) with retained molecular features may be desired for human consumption to derive certain benefits associated with DF. LÄS MER
4. Interactions between dietary chicory, gut microbiota and immune responses
Sammanfattning : This thesis provides a better understanding of interactions between diet, gut microbiota, and immune responses to a specific dietary fiber source, chicory (Cichorium intybus L). This was achieved by examining the impact of chicory fiber on animal performance, digestibility, gut development, commensal bacteria community structure in small and large intestine, and follow-up reactions with specific immune components, cytoprotective heat shock protein (HSP) 27 and 72, in vivo and in vitro. 5. Physicochemical properties of root fiber suspensions. A comparison between parsnip (Pastinaca sativa) and yacon (Smallanthus sonchifolius)
Sammanfattning : The physicochemical properties of two root suspensions, parsnip (Pastinaca sativa) and yacon (Smallanthus sonchifolius), were studied and compared at different concentrations and after being subjected to processes such as homogenization and heating. The study and the evaluation of the physicochemical properties of these plant materials in the form of pastes might help to increase the interest in these two roots, and possibly encourage their further industrial use.
