Sammanfattning : The aim of this thesis was to investigate the effects of dietary fatty acids on body composition and ectopic fat in humans, with emphasis on the role of the omega-6 polyunsaturated fatty acid (PUFA) linoleic acid (18:2n-6) and the saturated fatty acid (SFA) palmitic acid (16:0). The overall hypothesis was that linoleic acid would be beneficial compared with palmitic acid during overfeeding, as previously indicated in animals. LÄS MER
2. Lipid Composition and Deterioration in Light and Dark Muscle of Rainbow Trout (Oncorhynchus mykiss)
Sammanfattning : Nutritionally valuable lipids, including lipid classes and their fatty acids in light and dark muscle, have been determined and analyzed in farmed rainbow trout. Dark muscle was found to have a higher content of total lipids than light muscle, 7.3 wt% versus 3.0 wt%, which was mostly accounted for by neutral lipids, especially triacylglycerols. LÄS MER
