18. On the microstructure and mechanical properties of Mg-Al alloys
Sammanfattning : The microstructural features and the mechanical properties of binary Mg-Al alloys have been investigated by using a gradient solidification technique. Homogeneous and nearly defect-free samples were produced under well controlled cooling conditions, through which the microstructural characteristics as well as the relationships between microstructure and mechanical properties in Mg-AI alloys were precisely defined. 19. Structure-Control of the Rheological Behaviour of Particulate Gels
Sammanfattning : The focus of this thesis is the relation between the rheological and structural properties of mixed particulate gels, based on β-lactoglobulin, determined under both dynamic and static conditions. Rheological characteristics were recorded during formation of the gels, on set gels and during deformation and fracture of the gels, using viscoelastic measurements in shear and in compression and fracture mechanics in tension. 20. Evaluation of UHT milk processed by direct steam injection and steam infusion technology
Sammanfattning : UHT direct steam injection and steam infusion are widely used; however there is no comparison of their impact on milk components. This study evaluates the structural changes at different steps during the UHT processing of whole milk in a full-scale UHT plant by transmission electron microscopy (TEM) and particle size measurements, and follows the enzymatic activity.
