  1. 1. Gliadin-Blocking Peptides In vitro assessment of their potential to alleviate celiac disease development

    Författare :Karolina Hoffmann; Chalmers tekniska högskola; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES; MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; high-gliadin affinity blocking peptides; Caco-2 cells; in vitro digestion; tissue transglutaminase; celiac disease; gliadin; α-amylase trypsin inhibitors;

    Sammanfattning : This thesis work aimed to investigate the potential of synthetic peptides as agents to block wheat prolamins (gliadins) that trigger the development of symptoms in celiac disease. The first step of this investigation included selection and synthesis of peptides with high affinity to gliadins and assessment of the potential of these so-called blocking peptides to limit gliadin reactivity in vitro. 2. 2. Toward celiac-safe foods - Investigation of the interaction between transglutaminase 2 and gluten

    Författare :Niklas Engström; Chalmers tekniska högskola; []
    Nyckelord :MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; gliadin; Caco-2 cells; transglutaminase 2; ileostomy subjects; ascorbyl palmitate; gluten; gluten digestion; TG2; zinc; celiac disease; gluten intolerance; extrusion cooking;

    Sammanfattning : Celiac disease, a chronic autoimmune enteropathy, may develop in genetically predisposed individuals upon ingestion of gluten proteins found in wheat, barley, and rye. Overall prevalence of celiac disease is increasing and it currently affects around 1% of the population. LÄS MER

  3. 3. Exploring the Wood Adhesive Performance of Wheat Gluten

    Författare :Petra Nordqvist; Eva Malmström Jonsson; Mats Johansson; Bo Mattiasson; KTH; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; plant protein; wood adhesive; mechanical properties; wheat gluten; soy protein isolate; gliadin; glutenin; adhesion; hydrolysis; heat treatment; AFM;

    Sammanfattning : The increasing environmental concern has reawakened an interest in materials based on renewable resources as replacement for petroleum-based materials. The main objective of this thesis was to explore plant proteins, more specifically wheat gluten, as a binder in wood adhesives intended for typical solid wood applications such as furniture and flooring. 4. 4. Crohn's disease : Studies on epidemiology, twins, aetiological factors and clinical course with special reference to smoking

    Författare :Eva Lindberg; Linköpings universitet; []
    Nyckelord :Crohn s disease; epidemiology; incidence; prevalence; smoking; genetics; twins; dietary antigens; yeast; Saccharomyces cerevisiae; mannan; gliadin; betalactoglobulin; ovalbuntin; MEDICINE; MEDICIN;

    Sammanfattning : In an epidemiological study of the incidence of Crohn's disease in Orebro county during the 25-year period 1963-1987, the mean annual incidence was 6.1/105 inhabitants. During the first five year period the mean incidence was 4.3 but during the following four quinquennia the incidence was stable at around 6. LÄS MER

  5. 5. Freeze-Dried Wheat Gluten-Based Foams

    Författare :Thomas Blomfeldt; Mikael Hedenqvist; Delcour Jan; KTH; []
    Nyckelord :TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Foams; Wheat gluten; Glutenin; Gliadin; Renewable; Freeze-drying; Pore structure; Baceterial cellulose; Glycerol; Mechanical properties; Thermal conductivity; Combustion properties;

    Sammanfattning : This thesis presents wheat gluten foams as an alternative to the available commercialfoams. Polymeric foams, like all plastics, are mostly made from petroleum, and this isaffecting the environment negatively with the emission of greenhouse gases and generation oflandfills. LÄS MER
