6. Whole grain cereal products and baseline gut microbiota composition in metabolic and appetite regulation in healthy humans - Emphasizing rye and barley
Sammanfattning : The prevalence of obesity, type 2 diabetes (T2D) and cardiovascular disease (CVD) is increasing continuously worldwide. These metabolic diseases are associated with many health issues, including increased risk of depression and cognitive impairment. Whole grain (WG) has shown potential to prevent obesity, T2D and CVD. 7. Malting of Barley for healthy foods. Optimal conditions for phytate removal and preservation of ?-glucan, in vitro iron availability and degradation of phytate and ?-glucan during in vitro digestion
Sammanfattning : A high concentration of phytate (myo-inositol hexaphosphate) in cereals is known to impair absorption of dietary minerals. The aim of this work was to optimize a malting procedure to degrade phytate and/or increase phytase activity in barley to improve iron availability and to preserve the content of β-glucan, since β-glucan is associated with health promoting properties and is therefore of nutritional interest. 8. Hydrothermal Processing of Cereals Optimal Conditions for Phytete Degradation and Myo-Inositol Formation. Effect on Phytase Activity and Mineral Absorption
Sammanfattning : The aim of this thesis was to optimise a hydrothermal process to degrade phytate (myo-inositol hexaphosphate), increase the level of free myo-inositol and preserve phytase activity in cereals with the purpose to achieve products with improved mineral bioavailability. Phytate is known to impair mineral absorption and myo-inositol is considered to be a semi-essential nutrient. LÄS MER
9. Barley defense genes against aphids
Sammanfattning : Aphids are insect pests with major importance worldwide. By feeding from plant phloem, they directly withdraw nutrients. The feeding injury is often visible in the form of leaf rolling, chlorosis, necrosis or plant deformation. Their pest status is attributed also to vectoring of plant viruses. LÄS MER
10. Inhibition of Calcium and Zinc Absorption by Phytate in Man Methodological Studies and Hydrothermal Processing of Cereals to Improve Absorption
Sammanfattning : A mathematical model based on measurements in a whole-body counter described the retention of calcium in the human body. It was shown that the relative retention of intravenous and orally administered 47Ca in all subjects (n = 10 - 11) were well described by fitting a simple function of time with two free parameters to a few whole-body measurements after day 6, when the unabsorbed calcium had been excreted.
