    Sammanfattning : A high concentration of phytate (myo-inositol hexaphosphate) in cereals is known to impair absorption of dietary minerals. The aim of this work was to optimize a malting procedure to degrade phytate and/or increase phytase activity in barley to improve iron availability and to preserve the content of β-glucan, since β-glucan is associated with health promoting properties and is therefore of nutritional interest.     Sammanfattning : The aim of this thesis was to optimise a hydrothermal process to degrade phytate (myo-inositol hexaphosphate), increase the level of free myo-inositol and preserve phytase activity in cereals with the purpose to achieve products with improved mineral bioavailability.     Sammanfattning : A mathematical model based on measurements in a whole-body counter described the retention of calcium in the human body. It was shown that the relative retention of intravenous and orally administered 47Ca in all subjects (n = 10 - 11) were well described by fitting a simple function of time with two free parameters to a few whole-body measurements after day 6, when the unabsorbed calcium had been excreted.
