1. Acrylamide in food products : Identification, formation and analytical methodology
Sammanfattning : The aim of this thesis was to verify the indicated occurrence of acrylamide formation in heating of food, to identify factors affecting the formation, and to identify important sources of acrylamide exposure from food. As a prerequisite for the studies, gas- and liquid-chromatographic methods with mass spectrometric detection were developed for the analysis of acrylamide in food. LÄS MER
2. Analysis of Acrylamide and Anthocyanins in Foods : Extraction Optimization for Challenging Analytes
Sammanfattning : In this thesis, the main concern has been to improve the reliability of different parts of the analytical workflow (Paper I, II, IV &V). Additionally, one of the resulting optimized methods was used in a real application (Paper III). Paper I-II concerned the extraction of acrylamide (AA) from foods. LÄS MER
3. Cell models for evaluation of adult and developmental neurotoxicity : Focus on acrylamide
Sammanfattning : This thesis is aimed at summarizing some of the alternative in vitro methods and models that have been used to study both adult and developmental neurotoxicity (DNT), and also to pinpoint some of the important aspects of using alternative in vitro methods. The aim of the papers included in this thesis was to challenge the hypothesis that neurotoxicity and DNT of chemicals can be studied using robust endpoints for proliferation and neural differentiation, such as neurite outgrowth, mRNA expression and protein expression, in two different cell lines. 4. Acrylamide in Potato Crisps - A Three-year Study on Swedish-grown Potatoes
Sammanfattning : Acrylamide, a probable human carcinogen, has been found at mg/kg levels, in heat-treated carbohydrate-rich foods. Acrylamide is formed via the Maillard reaction as a result of the reaction between the amino acid asparagine and reducing sugars (glucose and fructose). LÄS MER
5. Synthesis and Characterization of Sec-Packings Based on Trimethylolpropane Trimethacrylate
Sammanfattning : Suspension and bulk polymerization of trimethylolpropane trimethacrylate (TRIM) and copolymerization of TRIM with methyl methacrylate (MMA) resulted in porous, hydrophobic, and chemically crosslinked networks. Copolymerization of TRIM with acrylamide (AA) and with N,N'-methylene-bis-acrylamide (bis-AA) resulted in hydrophilic gels. LÄS MER
