    Sammanfattning : Lipases are acyl hydrolases that play a key role in fat digestion by cleaving long-chain triglycerides into polar lipids. Due to an opposite polarity between the enzyme (is hydrophilic) and their substrates (are lipophilic), the lipase reaction occurs at the interface between the aqueous and the oil phases. LÄS MER

    Sammanfattning : The discovery that enzymes can function in organic solvents has broadened the scope of biocatalysis, making enzymes highly useful tools for organic chemists.     Sammanfattning : The synthesis of phospholipids with defined fatty acid and polar head composition catalysed by lipases and phospholipases was investigated.
