11. Properties of Interfacial Proteinaceous Films with Emphasis on Oral Systems
Sammanfattning : The present thesis addresses three issues related to proteinaceous films at solid/liquid interfaces: adsorption, lubrication and enzymatic interactions. Most of the work has been devoted to oral systems. In addition, gelatin has been investigated as a model protein. LÄS MER
12. Nanorheological Studies of Caseins
Sammanfattning : To be able to improve the quality of dairy products and dairy processes, knowledge of casein molecules, casein micelles and casein aggregates is important. The rheological properties of casein products, casein gels and adsorbed layers of casein, have been widely investigated. LÄS MER
13. Loss Minimisation in Dynamic Food Processes
Sammanfattning : The overall aim of the present work was to reduce losses during product changes or during rinsing in continuous food processing, with particular attention to dairy plants. The concept of sensor fusion of common process instruments was implemented as a tool to monitor the milk and fat concentrations in a dairy processing line. LÄS MER
14. Crossflow Microfiltration of particle Suspensions - The influence of hydrodynamics and physico-chemical interactions
Sammanfattning : Crossflow microfiltration is a technique to separate suspended particles (or cells or droplets) from liquids by use of a membrane that is permeable for the liquid but impermeable for the particles. The permeate flow drives particles to the membrane surface, where they may be deposited and form a fouling layer. LÄS MER
15. Drop Break-up in High-Pressure Homogenisers
Sammanfattning : The overall aim of this project was to investigate the drop break-up process in milk homogenisers. This was done by measurements and calculations of the flow fields in the gap region and by visualisation of drops being broken up. To make visualisation and measurements possible, two scale models of a homogeniser gap were developed. LÄS MER
